Award Winning Pineapple Rum Cake Recipe
This delicious pineapple upside down cake was created by Amanda Allison, and it won the grand prize in the baking contest at the 2006 Wahiawa Pineapple Festival on Oahu. The cake has the traditional topping made with pineapple, cherries, brown sugar, and butter, but this recipe adds two special ingredients to the topping: rum and macadamia nuts. The prize Amanda won for her cake recipe was a trip for two to the luxurious, upcountry Lodge at Koele on the island of Lanai.
